This course is designed to complete a student’s foundation in purchasing and food & beverage operational controls. Emphasis will be placed on mastering the purchasing cycle functions and back of the house menu management systems. Students will also develop income statements, and utilize spreadsheet applications to analyze food and beverage operations.
